These Queso Fresco Quesadillas are simple to make and full of flavor. Served with a generous amount of pico de gallo salsa for a great snack or lunch.
I cannot think of anything easier than making quesadillas con salsa y queso fresco for a meatless dish. Perfect for Lent!

I was hesitant to even mention it at first because it is so simple, but I decided it was worth the mention if only to remind myself about lovely queso fresco: it's really all about the cheese.

Not familiar with queso fresco? No worries, you can find it in the cheese section at big supermarkets and it looks like this:
This kind of cheese doesn't melt. It's creamy, a little salty, and crumbles easily. As you can see, these are not your “traditional quesadillas,” but once you try them out, you are going to want to make them again and again.
Queso Fresco Quesadillas
It makes 6-8 quesadillas
Ingredients
- 8 regular size corn tortillas
- 1 (10 oz) pack of queso fresco
- Pico de gallo salsa, learn how to make it with our recipe. Or other salsa of your choice. Try green salsa or red salsa.
Utensils
- Knife
- Comal, cast iron skillet or regular skillet
Process
I recommend buying fresh corn tortillas; the fresher the better.
Prepare the pico de gallo and place it in the fridge until ready to serve.
Cut the queso fresco in long slices. Set aside.
Heat the tortillas on a comal, a pan or griddle, until warm and soft. Transfer them to a tortilla warmer (tortillero)
I don't recommend trying to melt the queso fresco on the tortilla while warming the tortilla. First, it doesn't melt the way you would expect, and second, it will just make your quesadilla soggy.
Take one of the tortillas add a slice (or two) of queso fresco and pico de gallo to taste. That's it, enjoy!
