Fresh cilantro, Italian parsley, and dill from my raised-bed, kitchen-garden, the first harvest since planting it! Very satisfying and exciting!
For this holiday season, here are my interpretations of two quick and easy recipes for Salmon Cakes, a yummy addition to any festive, holiday party.
Holiday Salmon Cakes Recipe
Makes 4 cakes
- 1/4 cup finely chopped cilantro
- 1/4 cup finely chopped Italian parsley
- 2 Tbsp finely chopped fresh dill
- 1/8 cup finely chopped celery
- 1/2 cup yellow onion finely diced
- 2 eggs
- Salt to taste
- Pepper to taste
- 1 -5 0z (142 g) can Bumble Bee Atlantic Salmon (drained)
- 1/2 cup bread crumbs or Panko
- 2-3 Tbsp Olive Oil
Mix all, but the olive oil, together with a fork in a large bowl.

Form into several patties, the number depends on the size you like. Heat olive oil in pan on stove.
If patties seem too wet, and you think they will fall apart, you can squeeze out some of the water or add more bread crumbs or Panko. When oil is ready, add patties gently to fry. When browned on bottom, gently and carefully turn with spatula (or use two spatulas to turn) to brown on second side. If your patties are thicker, make sure to turn heat down a little so they will cook all the way through without burning.
Festive Salmon Cakes a la Mexicana Recipe
Makes 3-4 Cakes
- 1 -5 oz can of Bumble Bee Atlantic Salmon (drained)
- 1/4 cup finely chopped fresh Italian parsley
- 1/4 cup finely chopped fresh cilantro
- 2 Tbsp finely chopped fresh dill
- 1/4 cup finely chopped green onions
- Juice of 1 medium size Lime (American) or Juice of 3 Mexican Limes (limones or key limes)
- 1/4 cup of finely chopped Red, Yellow and Green Bell Peppers
- 1 Egg
- Salt to taste
- Pepper to taste
- 1/2 cup Panko or Bread crumbs (or more if you need it)
- 2-3 Tbsp Olive Oil
Mix all together, except for the olive oil, in a large bowl.

Don't you just love the festive holiday colors? The lime juice gives it just the right tartness. Just a touch of kosher salt to taste makes the flavor pop! Love them!
