Three Kings Day is just a couple of days away and my family is bursting with excitement. My boys know the Three Kings are arriving with more presents, but that isn't all, not by a long shot. Each year we get together with friends to eat green pozole with chicken and slice into a traditional Three Kings Day bread called Rosca de Reyes. It's a sweet bread with candied fruit and sugar on top, which we serve with Mexican-style hot chocolate.

One of the most anticipated moments is waiting to see who gets the surprise inside their slice of bread, the baby Jesus doll. The person who gets the surprise is responsible for throwing a party where tamales are served on Candlemas, which is February 2nd, and which marks the end of the Christmas season for many Mexican families. I've mentioned before we love parties, haven't I?

While waiting for the big day, I thought I would have some fun by making a tasty dessert inspired by Three Kings Day and using the colors of the Rosca de Reyes. I've been dying to use my beautiful new cupcake pan I bought for myself. These are yummy. Here is how to make them.
Three Kings Day Cupcakes with Candied Fruit
Makes 10 cupcakes
Ingredients
- 1 1/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- Pinch of salt
- 6 oz melted butter
- 1/2 cup sugar
- 1 large egg
- Zest of one orange
- 1/2 cup orange juice
- 1/4 cup candied fruit + more for decoration
You will also need a 12 cup muffin pan, a sifter, and cupcake liners of your choice.
Pre-heat oven to 350 degrees F
Sift flour, baking powder, and salt together. Leave apart. In a medium bowl beat together butter and sugar on medium-high speed until creamy, 1-2 minutes. Reduce speed and add the egg until integrated.
Add orange zest, half the flour mixture and half the orange juice, beat until combined. Scrape down the sides of the bowl as flour will stick to it. Add the remaining flour mixture and orange juice, beat for a few seconds. With a spatula scrape down the sides of the bowl again. Integrate candied fruit with the mix.
Place cupcake liners in muffin pan. Using an ice cream scoop, fill up the liners to two thirds full.
Decorate the cupcakes with the dried fruit and bake for 18-20 minutes until lightly golden and a toothpick inserted into the center comes out cleanly.
Let them cool.
Cover with more candied fruit if desired.
The days leading up to Three Kings Day are special and I like to prepare our home and go shopping to get ready. As I mentioned, while shopping I found this great Cooks 5 piece bakeware set at JCPenney, which I've been wanting for a while now.
The great thing is, in fact, I was able to find all the presents I needed for my family at the same time, as well as beautiful decorations for my home, like this royal blue tablecloth (check out tablecloths here). It made preparing for our Three Kings Day celebration special and a snap.
