My kids, like yours I'm sure, are always hungry when they arrive home from school or soccer practice. That's why having ready-to-eat, nutritious snacks available is a must. They know I have a special place in the pantry where they can find something yummy while I finish preparing dinner. It's a win-win!

This special place usually has nuts, golden raisins, fruit pouches and some of my favorite fruit bowls from Dole Packaged Foods. The kids just grab a bowl, open it, and enjoy immediately or take it on the go. I like the bowls because they are convenient and come with high-quality fruit in 100% real fruit juice.

No-Bake Mandarin Tarts
- Makes 24 mini tarts
- Prep time 5 minutes
- From start to finish (including 1 hour freezing time) 1 hour 30 minutes
Ingredients
- 3 cups graham cracker crumbs
- 2/3 cup butter, melted
- 8 oz cream cheese
- 2 tablespoons condensed milk
- 1 package Dole® Mandarin Oranges in 100% fruit juice (includes 4 individually wrapped bowls)
- mint leaves for garnish
You will also need a electric mixer and one (24 well) mini-cupcake tray.
Mix graham cracker crumbs with butter until it forms a well incorporated mixture (see photo).
Fill 24 mini-cupcake wells with the mixture, pushing with your fingers to form a crust.
Beat cream cheese, condensed milk and the fruit juice from one of the bowls until blended. Add the mandarin orange slices and mix again until smooth.
Pour mix into each crust. Top each with a mandarin orange slice and freeze for one hour.
With a knife, carefully separate the crust from the well walls. Let them rest at room temperature for 5 minutes and serve.
