As a child, every time I saw my mom preparing pork, which was often, it meant we were celebrating something. You might see a spiral ham, carnitas, or a beautiful, stuffed pork tenderloin. But whichever it was, it meant we were having a party.

We love pork so much, first, because of the taste, but also because it's so versatile. We have countless ways of preparing it and each recipe is special. As a mom, I love pork because it cooks very quickly, is a good source of protein, and saves me time in the kitchen.

Since the holiday season is upon us, and with it so many opportunities to celebrate, I thought I would share this recipe. My mom would make this for a special celebration, but also for Sunday dinners served up in a traditional pot called a cazuela (See below). We call it Tomatillo Chipotle Pork Chops.

In Spanish, we say “Entomatado,” which means, in this case, a salsa of tomatillos and chipotle chiles.

Tomatillos are a staple ingredient in Mexican food. I use them in my salsa verde, in my avocado enchiladas, and in my green pozole, among many others.

Fortunately these days they are very easy to find in the United States, just as in Mexico. In the United States check your local supermarket. I often find them in the produce section next to the jalapeño peppers. They come in two sizes. For these pork chops, I use the smaller, because then I only have to cut them in half (They're about 1.5 inches in diameter). But if you only find larger ones, about golf balls size or larger, just cut them into quarters.

Tomatillo Chipotle Pork Chops

Makes 4 pork chops

Prep time: 5 minutes

From start to finish: 45 minutes

Ingredients

  • 1 tablespoon vegetable oil
  • 4 pork chops with bones
  • 1 pound tomatillos, peeled and washed
  • 1 small onion, finely chopped
  • 1-2 chipotle peppers in adobo
  • 1 teaspoon salt

Process

1. Heat oil in a large pan or cazuela.

2. Sear pork chops on both sides. They will change from pink to white and take on a golden color in some parts.

3. Cut small tomatillos in half. If you cannot find this size, use the bigger ones and cut them in quarters.

4. Add tomatillos, onion, chipotle peppers and salt to the pork chops.

5. Cover your pan or cazuela, lower the temperature and let cook on medium heat for 30 minutes. At first, you might feel the dish looks dry, but you will see how the tomatillos and onion begin to release their liquid and create a sauce. You do not need to add water, just stir from time to time to let the tomatillos take turns at the bottom of your pan or cazuela. You will know when it is cooked when the tomatillos change from vibrant green to olive green.

Serve with white rice and beans.
