No-Bake Blackberry Icebox Cake is perfect right now as a sweet and refreshingly cool dessert for hot summer days. It's easy, too, you can make it in advance, keep it in the fridge, and enjoy it anytime.

During these hot, sunny, summer days, we find ourselves craving cool foods and using the oven as little as possible, which makes this the ideal recipe.
During the summer, I remember my mom would make desserts called, “Carlotas.” In my family this meant frozen or refrigerated desserts made with some type of biscuit, like ladyfingers or Marías, with fruit or lime juice mixed in and with La Lechera® sweetened condensed milk.
In addition to being both easy and fun to make, these look beautiful on the table, making them an ideal treat for celebrations with friends and family.
What Sweetness Unites, No One Can Separate
But what I like best about making them is my sons can help me. This recipe works great as an introduction to making desserts. My younger son, who wonders aloud sometimes if cooking is hard, accepted wholeheartedly my invitation to join me in the kitchen to make this recipe. He helped me from beginning to end. He liked blending the fruit in the food processor and adding the biscuits to the glasses the most.
This blackberry dessert takes just a couple of hours to chill, but the longer it stays in the fridge, the softer the biscuits get. I like that. I like to prepare them, therefore, a day ahead of time so they can be well chilled and the biscuits can absorb plenty of that blackberry goodness.
Serving it up in individual cups or glasses is an easy way to adjust the portion sizes depending on the age and needs of your friends and family.
No-Bake Blackberry Icebox Cake
Makes 8-10 depending on the portions
Prep time: 5 minutes
Start to finish: 2 hours (includes 1.5 hours freezing time)
Ingredients
- 1 can Nestlé® La Lechera® condensed milk
- 20 oz blackberries, you can use either fresh or frozen
- 1/2 cup whipped cream
- 8 tablespoons lemon juice
- 2 packs Marías biscuits
- Dark chocolate to garnish (optional)
Combine La Lechera® condensed milk, black berries, whipped cream and lemon juice, and blend in food processor or blender until smooth.
Take a cup or glass, pour 1-2 teaspoons of the blackberry mixture in the bottom. Cover with 2-3 Marías biscuits, then add a thick layer of blackberry mixture, another layer of 2-3 Marías biscuits, and finish with more blackberry mixture. When all the glasses are filled, put them in the freezer for 1.5 hours, then transfer to the fridge.
Top with a frozen blackberry and a small piece of dark chocolate if you wish.
