Autumn is here and it's time for soups, comfort dishes, pumpkins and sweet potatoes! Speaking of sweet potatoes, did I mention I love them? That's why I'm always looking for new ways to serve them to my familia.

You know how much I like preparing things quickly without sacrificing flavor, which is why I'm so happy to have found an ally in the new Starkist® Tuna Creations® Tear. Eat. Go pouches.
They come in different flavors and are so well seasoned that you don't need to add a lot of ingredients to them. They're so good, in fact, I keep trying the different flavors on crackers straight from the bag.
For this recipe, I went for the Tuna Creations® Bold Jalapeño flavor (of course!). The spicy jalapeño and sweet potato balance each other in a recipe that's both refreshing and comforting at the same time. That is a trick!
I just topped them off with green onions and cilantro and added a crunchy surprise. Try these out.
Tuna Stuffed Sweet Potatoes
Makes 4 mini tuna stuffed sweet potatoes
Ingredients
- 4 mini sweet potatoes
- 2 pouches Starkist® Tuna Creations® BOLD Jalapeño
- 6 fresh cilantro sprigs, chopped
- 1 green onion, sliced
- Salt and pepper to taste
- A handful of tortilla chips
Pierce the sweet potatoes with a fork, 5-6 times each.
Microwave for 6-8 minutes, turning them halfway through. Depending on your microwave, it might take a little more or less time.
Open the Starkist® pouches and mix with cilantro and green onions. Set aside.
When sweet potatoes are baked, cut them lengthwise. Add salt and pepper to taste.
Fill sweet potatoes with the tuna mixture and top with more green onions and pieces of tortilla chips.
