Savory Sweet Potato Waffles
These Savory waffles are a great way to add vegetables to kids' meals. Cook up a batch, put them in the fridge overnight, and then heat them up in the toaster for a yummy breakfast in the morning, or as an after school snack in the afternoon.

Servings: 4 round waffles the size of Belgian style waffles
- 1/2 bag Alexia Sweet Potatoes Fries with sea salt
- 3 green onions
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 4 tablespoons Land O Lakes Unsalted Butter melted
- 3/4 cup buttermilk*
- 1-2 cups pico de gallo salsa
- Jimmy Dean Fully Cooked Sausage optional
- Sour cream optional

*Substitute buttermilk with milk. Or you can make your own buttermilk by combining milk and vinegar at a ratio equal to 1 cup of milk to 1 tablespoon white vinegar. Let it rest for 5 minutes.
Pre-heat oven to 425 degrees F.
Cook Alexia Sweet Potato Fries according to the bag, for half a bag it will take approx 12 minutes. You can bake the whole bag and enjoy the crispy remainder, but if you do this, consider that the baking time will double.
Meanwhile, mix flour, baking powder, salt, and black pepper.
In a separate large bowl, lightly whisk the eggs. Pour in melted butter and buttermilk, then stir until well blended.
Add dry ingredients to the liquid mixture and stir until well-integrated. Finally, fold in cooked sweet potatoes and green onions.
Warm up the waffle maker and make the waffles following the instructions of your appliance.

Make it a full plate by adding Jimmy Dean sausages. They are already cooked, so you just need to heat them up for a few minutes and that’s it, easy peasy!
